I came across this red Turkish lentil soup recipe ages ago via the Turkish diaspora in Austria and Germany.

Some of the Turkish run Dōner/Kebap stalls also offer more than just shawarma style stuffed flatbreadand koftas. That is howI fell in love with this red lentil soup.

Instructions

For the Soup

  • Rinse lentils well and keep soaking for at least 5–10 minutes while you prepare the vegetables. The longer you soak the lentils (20-30 mins), the better, as it cuts cooking time and helps in the digestion.

    1 Cup Red Split Lentils

  • Prepare veggies. Chop garlic, slice onion, dice tomato and slice carrot.

2 Pieces Garlic Cloves, 1 Onion, 1 Tomato, 1 Carrot

  • Chop Mint and keep aside. This will be a garnish.

    a few Mint Leaves

  • Heat up a pot with the olive oil and sauté onion over a medium heat setting until soft.

1-2 Tablespoons Olive Oil, 1 Onion

  • Then stir in the garlic, tomato, and carrot and cook for 2–3 minutes while stirring occasionally.

2 Pieces Garlic Cloves, 1 Tomato, 1 Carrot

  • Reduce the heat or take the pot from the heat. Season with paprika and cumin powder, and add a tablespoon of tomato paste.

1 Teaspoon Paprika, ½ Teaspoon Cumin Seeds Ground, 1 Tablespoon Tomato Sauce

  • Take back to the heat or increase to a medium heat setting. Stir-cook the whole content for 1–2 minutes.

  • Strain lentils. Pour the lentils into the pot with the broth.

1 Cup Red Split Lentils, 3 Cups Water mixed with concentrated Stock

  • Mix the whole content well and cook for 10–15 minutes over a medium-high heat setting. The lentils will fill out the pot, and they are done cooking when they are soft.

  • Blend with a hand blender into a smooth soup without pieces and bits.

  • The soup should be still hot, but not over a heating source. Stir the lemon juice into the soup. Season with salt and black pepper to taste.

1 Tablespoon Lemon Juice, ¼ Teaspoon Black Pepper Ground, To Taste Salt

For the Topping

  • Pour the hot soup into serving bowls and garnish with olive oil, chili pepper flakes, and freshly chopped peppermint.

1-2 Tablespoon Olive Oil, Red Chili Pepper Flakes, a few Mint Leaves

Notes

  • Lentils should always be rinsed a few times with clear water to get rid of impurities. This also helps your digestion later.
  • You get whole red masoor lentils or split red masoor lentils. Try to get the split ones because they cook faster, but the whole ones are fine too.

Equipment

  • Hand Blender

🍴 Serving Ideas

I serve this soup as a lighter dinner meal with bread and occasionally a side dish salad.

A flatbread such as a za'atar bread compliments this lentil soup. But you can get a toasted garlic bread too or a baguette.

I think a middle eastern dip can be a great addition, such as a Labneh or a Hummus.

A light vinaigrette-based side dish salad such as a shredded carrot salad, green lettuce salad or easy kohlrabi salad compliments the red lentil soup really well.

🍱 Storage

You can keep soup leftovers in an airtight container in your fridge for up to 5 days.

This soup can be frozen in batches for busy work days. Thaw it overnight in the fridge, or in the microwave, or over the stove-top in a pan.

The topping can be added just before the serving and shouldn't be frozen with the soup.

FAQs

Why is my lentil soup tasteless? ›

Why does my lentil soup taste bland? Lentils have a relatively mild taste and take well to seasonings. To avoid a bland lentil soup, use a flavorful broth—whether that's homemade or store-bought chicken or vegetable broth. The other key is building flavor.

Should lentils be soaked before making soup? ›

The other good news: Lentils don't need to soak as beans do (though you do need to sort and rinse them before cooking). Different types of lentils cook in different amounts of time. Red lentils are the fastest cooking and they dissolve as they cook and make for a smooth soup.

How do you thicken red lentil soup? ›

Add flour or cornflour

Put a tablespoon of either into a small bowl and stir in 2-3 tbsp of the soup until you have a smooth mixture. Stir this back into the soup and bring it to a simmer. Cook for a few minutes to allow the starch granules to burst to thicken, and to cook out any flour flavour.

What is the No 1 soup in the world? ›

According to the Taste Atlas Awards, the international food database, the Filipino favorite, Sinigang, is hailed as the best soup in the world.

What is the national soup of turkey? ›

Lentil soup

Lentils hold a special place in the hearts of Turks. They are used as the main ingredient in the national soup, which has become the country's signature dish. The soup can be optionally garnished with carrots, potatoes, and onions.

Why do I feel nauseous after lentil soup? ›

Lentils are frequently cooked with strong spices, which can cause indigestion in some people. Lentils are a good source of potassium, however, too many lentils in the diet can cause hyperkalemia (symptoms may include vomiting, fatigue, irregular heartbeat and difficulty breathing) in people with poor kidney function.

Why do I feel bloated after lentil soup? ›

Another reason that lentils are known for causing gas and bloating is because they are high in what's called raffinose. Raffinose family oligosaccharides (RFO) are known to cause stomach discomfort and bloating because the human body lacks the enzyme required to break them down within the digestive tract.

What happens if you don't rinse red lentils? ›

With red lentils the only reaosn I can see for rinsing is to (slightly) reduce foaming; with Puy lentils and some others even that's not an issue and you may lose flavour.

What to pair with lentil soup? ›

Pair this lentil soup with crusty bread or a hearty salad like my kale salad or sweet potato salad. It would also go well with a vegetable side dish like roasted cauliflower, roasted broccoli, or a baked sweet potato.

Can you overcook lentils in soup? ›

This time, it turned out mushy and there wasn't a whole lentil to be found. Damn it! I figured out later that it spent about 2.5 hours too long in the slow cooker (a little miscalculation on my part). If you're like me and have overcooked Lentil Soup then you're in luck because I'm going to show you how to revive it.

Is lentil soup better the next day? ›

Lentil soup packs well for lunch in a leak-proof container, and it tastes even better the next day. This soup freezes and defrosts well. Make soup now and enjoy it later!

How much liquid for red lentils? ›

Rinse your lentils with fresh water before boiling to remove any dust or debris. Cook on a stovetop, using 3 cups of liquid (water, stock, etc) to 1 cup of dry lentils. Be sure to use a large enough saucepan as the lentils will double or triple in size.

What happens if you add too much water to lentils? ›

If you've added too much liquid and over cook them, they will get mushy! After 20 minutes most of the liquid will have been absorbed. There may still be a bit of liquid on the bottom, which is fine.

Do Turkish people eat soup for breakfast? ›

"There is a tradition of having breakfast with soups, one of the favorite being beyran, but lentil soup is also common. It is no new trend."

How many types of soup are in turkey? ›

There are more than 300 kinds of soup in the Turkish cuisine.

What do Turkish people eat when sick? ›

The most popular soup would be lentil soup or tarhana. On the other hand, chicken soup is always considered like a medicine for people with cold or flue. We have different recipes, but with carrots, pastas (noodles) and lemon juice, I love this hearty chicken noodle soup in cold winter times.
