Lauki ke kofte is a veg curry in which kofta made with bottle gourd are cooked in light tomato and onion gravy. Soft and melt in mouth lauki kofta makes a delicious change from very rich curry recipes.

Kofta is basically a ball of minced meat and belongs to the family of meatball dishes popular in the Middle East and Central and South Asia.

In India, we make Kofta curry. In Indian Cuisine, we have a number of vegetarian kofta curry recipes like this lauki kofta, paneer kofta, Kele ka kofta, Aloo kofta, malai kofta etc.

But my most favorite kofta recipe has to be this lauki kofta curry. Lauki is also known as bottle gourd in English and if you do not have that these can be made with opo squash. Other name of lauki is doodhi so these are also known as doodhi ke kofte or bottle gourd kofta curry.

Lauki is also known as ghiyain Punjabi and English name for lauki is bottle gourd.

Today I am going to make one of that list -a rich, creamy and delicious lauki kofta. . Usually, it is not one of the vegetables that are loved by kids or in some cases adults too. But every woman secretly tries to include it somehow in her family’s diet plan due to its good nutrition inbottle gourd.

  • Gram flourbesan / Chickpeas flour
  • Spices: whole cumin, turmeric powder, coriander powder, red chilli powder, salt, garam masala,
  • Onion: paste of 2 medium sized onion
  • Tomatoes: 3 medium sized tomatoes pureed
  • Oil for deep frying

How to make Lauki Kofta

For making Lauki Kofta Curry recipe, Lauki or bottle gourd is grated and mixed with spices and besan (gram flour).

This dough for lauki kofta is then made into small balls which are then deep fried to make lauki koftas.

The lauki kofta is golden brown from outside and soft from inside.

Then I cook a thick but light onion tomatoes gravy and simmer lauki kofta in the gravy.

So, once in a week, you can definitely include this ghia ke kofte in your everyday Indian meals.It is a boon for mothers who want to cheat their kids and feed them lauki as this dish camouflages the not so liked taste of lauki entirely.

I remember we used to eat half of them just like that after frying as they were so hard to resist. The fried kofta are then added to a delicious onion and tomato gravy. It tastes best with Jeera rice and Boondi raita on the side.

Ingredients

  • 400 g bottle gourd Lauki
  • 75 g gram flour besan / Chickpeas flour
  • 1 teaspoon turmeric powder
  • 2 teaspoon coriander powder
  • Salt to taste
  • 2 Tbsp Red chili powder
  • Oil for deep frying
  • ¼ cup onion paste 2 medium sized onion
  • 3 Tomatoes pureed
  • 1 teaspoon turmeric powder
  • 1 Tsp garam masala powder
  • Salt to taste
  • leaves Fresh coriander
  • 1 Tbsp Ginger green chili paste
  • 1 Tbsp Jeera

Instructions

  • Peel and grate lauki/bottle gourd.

  • In a mixing bowl add grated lauki, besan, chillipowder, salt, red chilli powder, coriander powder, coriander leaves in the grated lauki and mix well.

  • Grease palms of your hands and make small balls/ kofta from this mix and keep it aside.

  • Heat oil in a pan and deep-fry the lauki kofta on low to medium heat.Once they are brown and crisp, remove them on a kitchen paper napkin to drain excess oil.

  • In another pan heat 2 tablespoon oil and add cumin seeds and bay leaves. Once they start to crackle, add theonion paste.

  • Stir and cook this till they are golden brown and then add chilli powder, turmeric powder, garam masala and salt and tomato puree. cook this till oil starts to separate.

  • Add some water to it and bring it to boil.

  • Add the fried kofta and cover the pan and let the gravy simmer for another 5 minutes.

  • Garnish with coriander leaves and serve the kofta curry hot with rice or roti.

Tips and Tricks for Making Best Lauki Kofta Curry

  • You can use any bottle gourd-long or round.
  • Drain the excess water from grated lauki as it prevents the koftas from splitting while frying.
  • Add rice flour to make your koftas more crunchy.
  • Set the temperature of oil right while deep frying the koftas.
  • Make the gravy more rich by adding cashew paste.
  • Add a little sugar to give it sweet and salty flavor.
  • Do not overcook the gravy once the koftas are added.
