Creamy Whipped Feta and Cauliflower Mash Recipe

This cauliflower mash recipe has yielded the funniest photo shoot I have experienced to date by far.

The kids and I had a weekend away at my parents shack to get some beach time in before heading back to winter in the States (brrrr), and as they were completely buggered from a day of building sandcastles, I decided to try out a few new recipes.

This delicious Creamy Whipped Feta and Cauliflower Mash recipe being one of them.

Well, I set upmy tables for the photos, got the kids involved by having them hold a few props, and then had to rush off to answer a phone call.

When I returned I found my two-year-oldsitting naked (why?) on top of the table, half of thefood gone, and a huge spoonful of mashed cauliflower heading straight for his dirty wee face.

It was a mess, but all I could do was laugh, which he and his sister thought was hilarious, and a fit of giggles by all involved ensued.

At least he enjoyed it right?

(and even more important, at least I had already taken my photos, or tears would have replaced the laughter 😛 )

It was funny at the time.

Naked babies aside, this dish is just perfect for your Holiday table.

It replaces those trusty old mashed potatoes with something a little bit fancy, and all that added whipped feta and chives really make them just delightful!

Personally I would serve up mashed potatoes as well as I am all about the sides during the Holidays, but thats me🙄

Haha! I have a 1 yr old daughter and she has inserted herself in a photo shoot or two in that manner. Last one was a pile of pastries and she took a bite out of each one while I was tending to my older son (and only gone a couple of minutes). This mash looks delicious! Such a great use of cauliflower.

I actually served them up at Thanksgiving and everyone thought they were mashed potatoes. Even my SIL, who hates anything to do with cauliflower, ate two servings and asked for the recipe! She was shocked 🙂

You can add a litle softened cream cheese to the pot in the final step and stir until melted. Or you can add a keto thickener like glucomannan or xanthan gum. Be sure to whisk it in well when the mashed cauliflower is hot. You don't need more than about ¼ teaspoon per head of cauliflower.

If the cauliflower looks too grainy and solid, add a judicious amount of cooking liquid. You want it to be smooth in texture, not grainy but not liquid either–visually like mashed potatoes.

Why is mashed cauliflower better than mashed potatoes? ›

Compared to potatoes, cauliflower has less than half the calories per the same 100 gram serving. (source) Cauliflower has only 3 grams of “net carbs” per 100 gram serving, while potatoes have 14 grams of net carbs. (Net carbs = total carbohydrates – total fiber.)

How do you get water out of mashed cauliflower? ›

The trick to the perfect cauliflower mash is to drain it really well and let that water evaporate in a pan on medium heat for 5-6 minutes before it's mashed. If you don't do this step, you definitely can have a very watery mash.

How do you thicken creamy mash? ›

You can use what you have on hand: Flour, cornstarch, or powdered milk are all solid options that are probably already in your pantry. Potato flour and potato starch would work as well. Stir in the thickening agent gradually, about a tablespoon at a time, until the potatoes have reached your desired consistency.

Why does my cauliflower cheese sauce go watery? ›

She said: "Cauliflower cheese can go watery if the cauliflower is overcooked. Overcooked cauliflower releases water, which will seep into the rest of the dish. So even if your sauce was thick when it went in the oven, if it's in there too long, the water from the cauliflower will cause it to go watery."

How do you keep cauliflower from getting mushy? ›

The key to nonmushy cauliflower lies in how you cut it: Break apart the large head into smaller florets. Now take your knife, and starting at the stem end of the floret, slice about halfway down and snap apart.

Why does my mash taste watery? ›

Too much liquid: This is the most common reason. In the mashing process you may have added too much milk or broth. Boiled too long: Boiling your potatoes for too long can make them water-logged, which (you guessed it) can contribute to runny mashed potatoes.

Why do restaurant mashed potatoes taste better? ›

Whereas most home cooks will use a pinch of butter, a couple of shakes of salt, and a bit of milk, steakhouse chefs aren't afraid to go all out with the dairy. There's no room for 2% or even whole milk in their mashed potatoes -- the thinness of plain milk just isn't creamy enough to cut it. And creaminess is key!

How long does cauliflower mash last in the fridge? ›

Make ahead: Mashed cauliflower can be made up to 3 days in advance and stored in an airtight container in the refrigerator. Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 5 days.

Why do you soak cauliflower? ›

If you're planning to roast the cauliflower whole or slice it into steaks, slice off the thick stem at the base. Drop the whole cauliflower head upside-down into cool, salted water. Let it soak for 10 to 15 minutes to remove dirt, residue and bugs.

How do you thicken soup with cauliflower? ›
