No boiling, no candy thermometers. Plus you can easily adapt this and make your own Christmas fudge creation. Let's get started:

Ingredients You'll Need to Make Grinch Fudge:

  • Christmas spirit
  • White chocolate - premium baking chips
  • Sweetened condensed milk - NOT evaporated milk, read the label
  • Green food coloring - because Grinch
  • Vanilla
  • Mint extract
  • Salt
  • Sparkling sugar + holiday decorations

You'll also need some basic kitchen equipment: glass bowl, rubber spatula, 9x9 baking dish, and some parchment paper.

TIP: Line the 9x9 pan completely with parchment paper, even up the sides. This not only makes clean up a breeze, but it ensures you will get the fudge out of the pan easily.

How to Make Green Grinch Fudge:

  1. Line a 9x9 square baking dish with parchment paper, making sure to cover the sides and leave some paper outside the pan for grabbing onto later.
  2. First, in a small bowl stir together the vanilla, mint extract, green food coloring and salt. This makes it easy to stir into the fudge recipe later.
  3. Next, combine the white chocolate chips with the sweetened condensed milk in a large glass microwave safe bowl.
  4. Microwave the mixture for 1 minute. Stir and let the heat melt the chocolate. Stir until smooth. If you need to, microwave for another 30 seconds but don't overheat.
  5. Using the rubber spatula, quickly work the green coloring / flavor mixture into the fudge until well combined.

To get JUST the right color of Grinch Green we used half a teaspoon of green food coloring. This worked out to 30 drops of traditional green and 10 drops of neon green. (If you don't have neon, don't worry. I still had some left over from Easter.)

This fudge recipe makes about 48 small squares and can easily be doubled for parties and gifting.
